My sister in law is a Kiwi. She also collects recipes. This one she received from a friend in Dunedin, New Zealand. The friend's name was Mrs Nesbitt, who has probably passed on to that great kitchen in the sky by now. Wherever you are, Mrs Nesbitt, my undying gratitude for your meatloaf recipe. Whatever travails I have encountered in this life, your meatloaf recipe has made it all worthwhile. So, my tribute to Mrs Nesbitt:
1 LB. SAUSAGE MINCE (PORK)
1 LB. MINCED STEAK
1 CUP BREADCRUMBS
2 ONIONS FINELY CHOPPED
½ CUP MILK
1 DESSERTSPOON CURRY POWDER
SALT AND PEPPER
1 EGG
MIX ALL DRY INGREDIENTS THOROUGHLY, THEN ADD MILK. ROLL. BAKE IN GREASED DISH FOR 30 MINS. AT 350-400 DEGREES. THEN ADD SAUCE.
SAUCE
½ CUP WATER
1TEASPOON INSTANT COFFEE
½ CUP TOMATO SAUCE
¼ CUP WORCESTERSHIRE SAUCE
2 TABLESPOONS VINEGAR
2 TABLESPOONS LEMON JUICE
1 OZ. BUTTER
¼ CUP BROWN SUGAR
MIX ALL TOGETHER AND BOIL 5 MINS IN SAUCEPAN. POUR OVER MEAT AND BAKE FURTHER 45 MINS. BASTING FREQUENTLY.
